This delectable morsel not only beats the crap out of brownie mix brownies, it was pretty easy to make. If you are pressed for time, then you can use brownie mix for the brownie portion of this recipe. However, I would urge you to invest the time to make the brownies from scratch, because it will make a difference in the taste of the final product. First you mix up the brownies and pour them into a pan, then you mix up the cheesecake and pour it on top. You swirl it with a knife to make it look all marbly, then you pop it in the oven and bake it just like normal brownies. It's a piece of cake to make-but so much better to eat!

Brownie Recipe:

Ingredients:
2 eggs
1 cup sugar
1/2 tsp vanilla
1/4 tsp baking powder
2 squares(oz) unsweetened chocolate
1/3 cup oil
1/2 tsp salt
1/2 cup flour

Melt the chocolate and allow it to cool. Combine the eggs, sugar, and vanilla. Add the cooled chocolate and the oil. Mix the flour, salt, and baking powder separately before adding them to the batter. Pour into a greased 8x8 pan. Preheat the oven to 350 degrees F, and make the cheesecake.

Mint Cheesecake Recipe:

Ingredients:
8 oz softened cream cheese
1/3 cup sugar
1 egg yolk
1/2 tsp vanilla
1 tsp mint extract

Mix the cream cheese and sugar. Add the egg yolk, vanilla, and mint extract and stir until smooth. Pour the cheesecake on top of the brownie mix in the 8x8 pan, and use a knife to make a swirling pattern. Bake at 350 degrees F for 20-25 minutes, until the edges begin to turn golden. It's done when a knife inserted in the middle comes out with no brownie and only a little cheesecake on it. Chill in the refrigerator for several hours to further solidify the cheesecake before eating. Eat cold to intensify the minty flavor.
