For the past few days, I've been having to remind myself that it's summer vacation. I'll be relaxing in front of the TV or taking a leisurely walk, unable to shake the feeling that I ought to be stressing about something. Then I'll remember that I have no reason to stress about anything at the moment, and a big smile will come over my face.

    My plan for this summer goes something like this: Work a few shifts a week at the dining hall. Cook lots of good food and blog about it. Spend lots of time chilling with friends. Go to Greece! (that'll be happening in August) Go camping! RELAX.
Basically, as long as I show up for work when I'm supposed to, I'm golden.

To kick off this wonderful season, I thought I'd share a recipe that's as easy as it is refreshing. On those days when it's too hot even for a bowl of ice cream, this grapefruit granita will cool you down. You won't even need to get out your ice cream maker or set up your blender.

Ingredients:
1/2 cup grapefruit juice, with some pulp (squeezed from 1 medium grapefruit)
1/2 cup water
1/4 cup granulated sugar

Mix the grapefruit juice and water in a glass or clear plastic measuring cup. Add the sugar and stir until it dissolves. Pour the mixture into a clean ice cube tray. Freeze the cubes for 2 hours or longer. Pull the tray from the freezer and push a fork into each cube several times to break them up. Pour the mashed cubes into a bowl, and break them up with the fork to your desired consistency. Enjoy immediately.
