Blueberry Oatmeal Pancakes

Posted by Emma Barker on Saturday, July 31, 2010, In : Breakfast

There are people who are good at waking up in the morning, and then there are people like me who are good at hitting the snooze button. I sometimes wish I was the sort of person who could bounce out of bed at 5 am and enjoy the sunrise, but I know myself well enough to realize that's never going to happen. Today was an exception: I got to watch the sunrise while I drove to the 6:15 breakfast shift I somehow got scheduled for. Since I was cashiering, I got to greet all the customers going i...

Pesto and Pepper Omelette

Posted by Emma Barker on Tuesday, December 29, 2009, In : Breakfast

You must know how happy I am about finding yet another food that tastes good with pesto. For a long time, I had no idea how to make a good omelette. My attempts at omelettes had a way of always turning into scrambled eggs, which are fine when you make them on purpose, but disappointing when you want an omelette. Bagel French Toast

Posted by Emma Barker on Wednesday, November 11, 2009, In : Breakfast

About a week ago, generic store-brand bagels were on sale at the supermarket. I bought two bags of 6, which is a lot of bagels for one person to use up before they go bad! I've been working my way through them pretty diligently, and let me tell you, I'm getting tired of eating bagels with cream cheese for lunch every day. Since today is Veterans' Day, I don't have any classes, which meant I had time to make a special breakfast for myself this morning. I had never tried making french toast...

Banana Bread

Posted by Emma Barker on Saturday, October 3, 2009, In : Breakfast

The smell of baking bananas filled the air...my housemates sniffed it appreciatively while I took the banana bread out of the oven to test it for doneness. I stuck in the knife, only to have it come out dirty again. What was going on? Why was my banana bread taking so ridiculously long to bake? The recipe I was using said 20 minutes, and it had been 25!

But wait! There's the problem! The recipe I was using was for Banana Nut Muffins...and of course muffins don't take as long to bake as a loaf ...
